How to reduce kitchen waste without disrupting service

Start from what you actually sell

Connect supplier orders to what's actually needed

When inventory "talks" to sales, orders get more precise — no more "order the usual," but quantities calibrated to what the venue actually consumed in previous weeks.

Make expiration dates visible, not just stock levels
